Roasted Apple, Garlic & Pumpkin Soup
Bevan Smith from Badger and Mackerel believes all in-season vegetables should be roasted to get the most flavour from them.
It’s the Thames Street eatery's ethos as it brings out the sweetness from the caramelisation and retains the full flavour of the vegetable or fruit.
And what better combination for a late winter (and early spring!) soup is there than roasted apples and roasted pumpkins combined?
Veggies are supplied by Mean Greens, garlic from NZ Garlic. And the apples? Well those have been sourced through customers and local orchards.
They make their own chicken stock for the base, having a no food waste practice in the kitchen.
This full flavoured roasted soup is served with a side of ciabatta from New World South Hill Bakery.
